How is available loot calculated when attacking or being attacked?

Just trying to figure how much to keep on hand when I'll be going into a down time. Is it like 50% of your resources that are available for loot when attacked? Or how is it calculated?

Not confirmed, but I believe it's 50% of loot from your caravans and farms and 25% from your markets and mills. So it's better to collect food and gold as often as you can so that there is less available to steal.
