I agree with you, Macku. Personally, I have the Hanging Gardens and quite like the wonder. I can collect more often from my fruit trees and mines with reduced time. This may not seem like much in the earlier ages, but I'm in the Medieval age and it is very useful. Also, about having people tied up in upgrades, I have 13 villagers. And at any point, I ensure that I have at least two villagers for collecting from mines, fruit trees, hunting foxes, deer, and bunnies. This has been working very well for me, even when I have 3 other upgrades (4+4+3) upto 5 upgrades (2 villagers per upgrade) going on. Plus, like you mentioned, I like the surplus of cider and metal which we can use to buy stronger mercs. Also, you can do the library research for more fruit trees, thus giving you more food/cider.
Also, despite a lack of popularity, I went with the Chinese nation. I find that it suits my playing style very well. I always use the one extra villager to upgrade walls or hunt bunnies. Given a choice, would I choose differently? Maybe- but wonders like hanging gardens and nations like the Chinese and French seem underrated.
