Often, your units will simply ignore the enemy defenders even when the defenders are the closest target or when the defenders are attacking their fellow troops. They respond only when the defenders hit them in the face - sometimes that is not even the case (see video 2).

The weird thing is my troops kill the first defender but flat out ignores the second one.

Look at the cavalry at the left. After destroying the garrison, the cavalry kills 2 of the 3 defenders that is attacking him, but ignores the third one. Later on, a group of cavalries join up with the first cavalry and all of them ignore the lone defender who is still attacking the first cavalry.

2 defenders attack a cavalry (at a distance too, I might add). While the cavalry under attack does retaliate, the elephant and the other 2 cavalries simply walk past the defenders without doing anything.
