I find defense to be the most enjoyable aspect of the game, actually. I have my city tightly clustered, with maxed out catapults, ballistas and archer towers overlapping fields of fire. Except for my castle, all troop defenses (barracks and stables) are outside the walls, but with overlapping fields and within the range of my Acropolis for the respawn boost. I try to have all defensive blessing boosts (Building, tower and forest defender) active at all times. I try to have all walls and gates maxed. Resources are protected behind my walls (excepting farms). As I don't care about collecting medals, my TC is outside the walls, but still fairly close to my defenses.
I have little need for food right now (everything is upgraded and I always pay for my troops with looted food on raids), so my mills are almost always brimming with around 2million food. The big food supply entices other players to attack me (along with frequent annoying raids I conduct on other cities) and they invariably come to try and take it, die horribly, and I collect crowns from the victory. It's a nice way to build up your store of crowns and always a lot of fun to watch on the replay. 8)
