If a defensive building say for example sniper tower, 109/second and it shoots once every 3 seconds so each shot produces 327 damage? Also if I research and make them faster like mortar or anti-tank would it then produces less damage per shot since it fires more often? Just wondering.

I understand it like you : assume 100/second and one shot every 4 second, for me it means one shot = 400 damage.
Now let's say a research gives x2 to shot rate to make one shot every 2 seconds, for me it would be now one shot = 200 damage.

So with this an enemy with 400 health is killed in 4 seconds in every case, but an enemy with 200 health would be killed in 2 seconds instead of 4 because one shot with less damage is enough so there is an advantage.

Actually for each troop and defense building 4 data must be mentioned; DPS, rate of fire, damage of each fire and area of effect for splash damage. But usually developers prefer to hide these figures and make them a puzzle for veteran players. I personally prefer to see all of these to have a better judgment on the power of each unit.
