If you read the update notes, you'll come across this line
Unfortunately most of the time it doesn't seem to work that way.

You'll notice that the crossbowmen keep on attacking the mill/market even when the defenders come into range. They only switch targets when the defenders whack them a couple of times.
Near the end (~0:45) however, they do behave as described in the update notes, i.e. switch to attacking enemies when they get close enough. Unfortunately, they don't act like that consistently.

All except 2 of the crossbowmen ignore enemy defenders when they come close. The crossbowmen seem locked onto the buildings they are currently attacking and they only attack the defenders when the latter hit them directly.

Out of the 6 crossbowmen attacking the Town Center and Temple, only 1 (the bottom one) switched target to attack the defender when the latter comes close.

which sounds pretty great.Ranged Infantry switches targets when enemy troops come into range.
